“Quiet nose, with a bresaola scent. Then fresh tobacco leaf. More intense on the palate – dark semi-dried cherries, with a tremendous white-pepper lift through the roof of the palate. At first sip, I thought this would be fierce and sweet and compact, but it seems to unclench and uncurl itself, lengthen in the mouth, drawing long, super-fine tannins from a tightly folded pile. Layers of crackly tobacco-leaf spice and golden herb against the dark ripeness of the fruit. Seductive, graceful, and yet with slightly wicked playfulness.

SOIL COMPOSITION
South exposition, altitude 350 asl. These hills, of recent geological formation, have a mainly calcareous soil on the surface, with a high presence of quartz sand and very fine limestone, which alternate with compact layers of gray sandstone.

Manual, end September.

VINIFICATION AND AGEING
Long fermentation with maceration in contact with the skins for 20 days at 28°C. Malolactic fermentation in 500l tonneaux. Batonnage of fine lees for 7 months and aging in wood for 18 months.
